1. When we had our pig butchered, I was introduced to many cuts of meat that I was not accustomed to using- cuts that you don't see in the normal grocery store. But more than that- I also found out that cuts like "ham steaks" and even a whole ham is much, much different when it is.

2. Lay the ham steaks in a Bradley rack, Weber grill pan or even a cookie sheet. Brush some cooking oil on the top side to help the rub (purchase recipes here) to stick. You can also use yellow mustard if you are so inclined. Sprinkle some of Jeff's original rub (purchase recipe here) on the top side of the ham steaks.

3. May 02,  · This is not cured ham steaks, it is fresh pork. Based on what I have read, it is a tough cut of meat and often braised. It can be used like pork "cutlets" and pounded thin into scaloppini. The locals around here (rural south) just say fry it up for breakfast, but I'm not fond of shoe leather.
